In 2000 the Province of Modena - along with Slow Food and Associazione Provinciale Allevatori (Association for cattle breeding and genetic improvement) - began to promote a biodiversity project for the recovery and promotion of the Bianca Modenese breed. On 4 April 2005 farmers obtained the first wheel of Parmigiano Reggiano made entirely from Bianca's milk. The wheel passed all quality checks with excellent results.
We carefully treasure the precious teachings that our fathers and grandfathers handed down to us.
This minor cattle breed of limited diffusion – native of the Po Valley – produces milk of unquestionable quality.
The fodder of our production is enriched with the intense and persistent aromas of the Apennine Mountains.
We aim to continue to manage all stages of the production and distribution chain independently.
